Stir-Fried Garlic Green Beans

Green beans with garlic make a classic Chinese stir fry dish that is tasty and healthy when done right. This recipe pairs crisp green beans with sweet onions, garlic, and ginger. It’s simple and fast!

Restaurants sometimes over-fry this dish until the beans are greasy and mushy. This recipe instead partially boils the beans so they need less oil, but keep a nice green color and crunch.

INGREDIENTS

  • 300 g green beans

  • 4 cloves of garlic

  • 1 thin slice of ginger

  • Half onion

  • 2 tablespoons of soy sauce

  • 2 tablespoons of canola oil


STEP 1: PREP THE INGREDIENTS

Mince the garlic and ginger. Dice the onions. Chop the green beans into short, bite sized pieces.

STEP 2: PARBOIL THE BEANS

Cook the green beans in boiling water for 4 minutes, then drain. They should be soft but not cooked all the way through – they’ll finish in the wok.


STEP 3: STIR FRY

Turn the stove to medium heat. In a wok, add oil, then stir fry the garlic and ginger and onions until soft. Add the green beans, then add the soy sauce. Stir fry the whole mixture until the sauce has dried up and the beans taste done – they should be tender but still a bit crisp.
